Federico and Genoveva Lozano are always there, always ready with a smile and always taking their work in stride. The business experience comes natural since they have been at it for about twenty years. They have survived two fires at their business, but each set back brought them back more determined than ever. Making tortillas these days is a dying tradition but eating them has taken the market by storm. La Gitana produces from 15 to 20 thousand tortillas per day and about 100,000 per week. Besides their sales at the tortilleria, they deliver tortillas to most of the grocery stores in Uvalde and the surrounding communities. Their route includes Sabinal, Batesville, Brackettville, La Pryor and as far away as Kerrville. Their major product is the com tortilla. Hundreds of pounds of com kernels are soaked in lime waler over a day, rinsed and ground into masa. Los jovenes adultos con problemas hoy en dia, fueron un dia el nino con problemas que necesitaba intervención. Si, cada nino puede aprender, pero las escuelas deven de ser mas inovativas y preocupadas. Los alumnos que dejan la escuela son los cobros de impuestos del manana. Si la sociedad deberás se interesa, debemos de preocuparnos por aquellos que nos necesitan y debemos de ser justos al hacerlo.
